Mediterranean Baked Penne

Ingredients
1/2 c breadcrumbs
1T E.v.o.o.
1 green bell pepper, seeded and chopped
1 red bell pepper, seeded and chopped
1 medium onion, chopped
1 clove garlic,minced
2 can diced tomatoes, undrained
salt and pepper to taste
1 pound penne
1 1/2 c. part skim mozzarella,shredded
2 large eggs-lightly beaten


Instructions

Preheat oven to 375. Coat 3 qt. casserole dish with cooking spray. Coat the dish with 1/4 c. breadcrumbs, tapping out the excess. Boil water for pasta.


Heat oil in large skillet over med-high heat. Add veggies and garlic. Saute 10 minutes. Add diced tomatoes. Simmer till thickened. Season with salt and pepper. Transfer to large bowl.


Meanwhile, cook penne to al dente.Drain and toss with diced tomato mixture. Stir in mozzarella.
Spoon pasta mixture into baking dish. Drizzle with beaten eggs and top with remaining 1/4 c breadcrumbs. Bake 40 minutes.

Dinner Tonight---Green Chicken and Rice( from my Dear Friend Nicole)

Mexican Green Rice

Saute 1/2 c. chopped yellow onion and 1 t. minced garlic in 1 T olive oil. Add 1 c. White long grain rice(I used brown rice). Lightly toast. Add 1 bunch of pureed cilantro(blend in blender with a bit of olive oil) Add 1 1/2 c. chicken broth(can use water also)

Bring to a boil and reduce to a simmer for 17 minutes. Fluff. Serve

Spicy Garlic Marinade for Chicken, Seafood or Tofu
1 bunch cilantro
1 large whole head garlic, minced( or 2 t. from jar)
2 T coarse black pepper
1 t curry powder
1/4 t crushed red chili pepper
1/4 c. peanut oil( i used canola)
1/3 c. soy sauce

Mix all ingredients in blender. Pour into flat baking dish. Add meat and marinate overnight.( i did 2 hours and it was yummy but its even tastier doing it overnight)
Next day,pull chicken out of fridge 15-20 minutes before Barbecuing.

Hearty Oatmeal Pancakes

I just got this new cookbook and its AMAZING!!!! I love it because they are all healthy recipes and it contains NUTRITIONAL INFO for every recipe! WOOOOO! I highly recommend getting it...hint hint...Walmart! :)

Ingredients:
1 c. quick cooking oats
1/2 c. all purpose flour
1/2 c. whole wheat flour
1T sugar
1 t. baking powder
1/2t baking soda
1/4t.salt
1 egg,lightly beaten
2 c. buttermilk( i use 1 1/2 c. skim milk)
1t. vanilla extract( i didnt have any left so I used cinnamon, to taste)
Directions:
Combine first 7 ingredients in one bowl. In another bowl, combine last 4 ingredients. Stir wet ingredients into dry.Mix until just mositened.
Pour batter by 1/4 cupfuls onto hot griddle coated with cooking spray(i used some canola oil) Turn when tops bubble. Cook until second side is golden brown.
Serve with assorted berries.( I used 4 T cool whip free, for topping then added berries)

Homemade Crescent Roll Dough

Ingredients

1 T. active dry yeast
1/2 c. warm water
1 1/2 c. milk
1/2 c. butter, softened and cut into chunks
1/2 c. sugar
1/2 c. mashed potato flakes
2 eggs
1 1/2 t. salt
6 to 6 1/2 c. flour

Directions
1. Dissolve the yeast in warm water in a large bowl. Add the milk, butter pieces, sugar, potato flakes, eggs and salt to the bowl. Stir just to combine. Add three cups of flour and mix well; stirring until smooth. Add as much of the remaining dough as possible until a stiff dough forms.

2. Knead a few times or mix with a dough hook for an additional minute. Cover dough and let rise for 15 minutes.

3. Divide dough in half and roll each half into a circle about 1/2 in. thick or a little less. Cut each circle into evenly-sized wedges, about 16-18 each. Roll the wedges of dough from the wide end to the point. Curve ends slightly and place on a cookie sheet. Cover and let rise one hour.
4.Bake at 350 degrees for 15-18 minutes. (I usually rotate the cookie sheets from top rack to lower rack halfway through so that they get evenly brown on top and bottom.)The cooked rolls can be frozen and thawed in a few hours on the counter. Or the rolls can be frozen before the second rising.

Dinner Tonight---Crockpot Honey Teriyaki Chicken Breasts




Ingredients
chicken breast halves....as many as needed
KC Masterpiece Honey Teriyaki Marinade
Directions
Place chicken in crock pot. Pour desired amount of marinade onto chicken.Cover and cook on low 6-8 hours.
Serve with brown rice and salad.

Dinner Tonight-My Famous Sweet Chili& Homemade Rolls

My Famous Sweet Chili
Ingredients:

6-8 slices bacon
1 yellow onion-chopped
1 clove garlic-chopped( or sometimes I use garlic powder)
2 lbs. 93% lean ground beef
1 can diced tomatoes
1 green or red pepper-chopped
1 can chick peas, undrained
1 can Mexicorn
1/2 t. salt
1 T brown sugar
Chili powder to taste( i use a lot)
1 t. cumin


Directions

Saute bacon till crisp in heavy soup pot.Add onion garlic and peppers.Saute till soft. Add ground beef. Stir and saute until well done. Add tomatoes, beans,salt,brown sugar,chili powder, and cumin. Adjust salt and chili powder to taste. Cover and simmer about 1 hour, until thick.





*The longer the chili goes the thicker it becomes. If too thick,add tomato juice and continue cooking adjusting brown sugar to taste!

Dinner Rolls

Ingredients
4c flour
1t salt
6t baking powder
1T shortening( I used Light margarine)
1 1/2 c milk( i used skim)


Directions
Sift together first 3 ingredients.Add milk and shortening(or butter) Mix till dough forms. turn out onto a floured surface and knead until smooth dough forms



Cut dough into 4" long and 2" wide pieces. Place on greased baking sheet. Brush with melted butter on top.Sprinkle with your choice of seasonings( i used Italian) Bake at 400 degrees for 10-15 minutes

Dinner Tonight---Spinach Penne



Ingredients
1 (8 ounce) package Pene pasta
1 (28 ounce) jar spaghetti sauce
1/4 cup grated Parmesan cheese
2 cups shredded mozzarella cheese
1 (10 ounce) package frozen chopped spinach, thawed and well drained

Cooking Instructions
Preheat oven to 350 degrees F (175 degrees C).


In a large pot with boiling salted water cook penne until al dente. Drain.
In a large bowl combine spaghetti sauce, Parmesan cheese, and cooked and drained pasta.
In a separate bowls place 1-1/2 cups of the shredded mozzarella cheese and spinach.
To assemble, in a 1-1/2-quart casserole dish layer half of the pasta mixture, half the spinach, and half the shredded mozzarella cheese. Repeat. Cover with aluminum foil.

Bake in preheated oven for 30 minutes. Remove from oven; sprinkle remaining 1/2 cup shredded mozzarella cheese over top and bake until cheese melts.

Grilled Cheese and Turkey Sandwich

Gather your ingredients( recipe follows)
Spread the mayo on one side of each slice(if making making more the one sandwich as I did)
Place mayo side down. Add cheese and meat(or honeymustard) on topFlip when browned.Serve. mmmmmmm.



Ingredients:
2 slices whole wheat bread( i use Sarah lee 45 calories wheat bread)
2 slices cheese-any kind( I used Kraft American)
2 slices turkey or any meat( i didn't have any on hand so I used a teaspoon of Honey Mustard instead)
2 t. fat free mayo( i used Kraft Free)

Directions

Heat pan over med high heat.(i used some olive oil in the pan to crisp it up) Spread one side of each slice of bread with 1 t. of mayo.Place one bread slice(mayo side down) in pan. Add cheese, meat(or honey mustard) on top. Place other piece of bread on top, mayo side up.Cook till lightly browned on that side. Flip and repeat.

Makes 1 sandwich
