Holy cow! i cannot believe its been almost one year since i last posted any recipes! AHHHHHH! well my dear followers...(yay for my newest, michele! thank you!) that comes to and end. I will try to post at least what we have for dinner and the recipe every night!
big task, I know...hopefully I can get back in the swing of things cuz I loveeee cooking and baking! Anyways, wish me luck!

Ribbon Pumpkin Muffins
Filling
6 oz reduced-fat cream cheese
1/4 c. sugar
1 T all purpose flour
2 egg whites
Batter
1 c. pumpkin
1/2 c. applesauce
1egg
2 egg whites
1T canola oil
1-2/3 c.all purpose flour
1/2 c +1/4 c. sugar
1 t baking powder
1/2 t cinnamon
For filling
Mix all ingredients and set aside
For muffins
Combine all ingredients in large mixing bowl. Fill muffin cups up a little less the half with pumpkin mixture. Add a tablespoon or two of cream cheese mixture on top. Top cream cheese mixture with more pumpkin mixture.
Bake in preheated 350 degree oven for 25-30 minutes till toothpick inserted in cenetr comes out clean.

Home Made Stromboli
Crust Recipe
Add yeast, water, and sugar in a bowl. Mix together salt and oil in seperate bowl. Add to yeast mixture.( I added all ingredients into my bread machine)


Top with your choice of toppings.



1T yeast
1c warm water
1t sugar
1t salt
2T olive oil-i used canola
1 1/2 c. whole wheat flour
1/2 c. white flour
Add yeast, water, and sugar in a bowl. Mix together salt and oil in seperate bowl. Add to yeast mixture.( I added all ingredients into my bread machine)

Mix together flours and add wet ingredients to dry. Mix. Knead 5 min or so until smooth and elastic. Form into ball and let rest 10 min.

Roll out to about 8" long by 3 " wide.




- I used, lean ground beef( 93% lean)
- part skim mozzerella shredded
- fresh broccoli, chopped.
- 1 can tomato paste for sauce
Fold edges to cover toppings. Bake @ 400 degrees for 15 minutes on greased cookie sheet.
