Mediterranean Baked Penne

Ingredients
1/2 c breadcrumbs
1T E.v.o.o.
1 green bell pepper, seeded and chopped
1 red bell pepper, seeded and chopped
1 medium onion, chopped
1 clove garlic,minced
2 can diced tomatoes, undrained
salt and pepper to taste
1 pound penne
1 1/2 c. part skim mozzarella,shredded
2 large eggs-lightly beaten


Instructions

Preheat oven to 375. Coat 3 qt. casserole dish with cooking spray. Coat the dish with 1/4 c. breadcrumbs, tapping out the excess. Boil water for pasta.


Heat oil in large skillet over med-high heat. Add veggies and garlic. Saute 10 minutes. Add diced tomatoes. Simmer till thickened. Season with salt and pepper. Transfer to large bowl.


Meanwhile, cook penne to al dente.Drain and toss with diced tomato mixture. Stir in mozzarella.
Spoon pasta mixture into baking dish. Drizzle with beaten eggs and top with remaining 1/4 c breadcrumbs. Bake 40 minutes.

Dinner Tonight---Green Chicken and Rice( from my Dear Friend Nicole)

Mexican Green Rice

Saute 1/2 c. chopped yellow onion and 1 t. minced garlic in 1 T olive oil. Add 1 c. White long grain rice(I used brown rice). Lightly toast. Add 1 bunch of pureed cilantro(blend in blender with a bit of olive oil) Add 1 1/2 c. chicken broth(can use water also)

Bring to a boil and reduce to a simmer for 17 minutes. Fluff. Serve

Spicy Garlic Marinade for Chicken, Seafood or Tofu
1 bunch cilantro
1 large whole head garlic, minced( or 2 t. from jar)
2 T coarse black pepper
1 t curry powder
1/4 t crushed red chili pepper
1/4 c. peanut oil( i used canola)
1/3 c. soy sauce

Mix all ingredients in blender. Pour into flat baking dish. Add meat and marinate overnight.( i did 2 hours and it was yummy but its even tastier doing it overnight)
Next day,pull chicken out of fridge 15-20 minutes before Barbecuing.

Hearty Oatmeal Pancakes

I just got this new cookbook and its AMAZING!!!! I love it because they are all healthy recipes and it contains NUTRITIONAL INFO for every recipe! WOOOOO! I highly recommend getting it...hint hint...Walmart! :)

Ingredients:
1 c. quick cooking oats
1/2 c. all purpose flour
1/2 c. whole wheat flour
1T sugar
1 t. baking powder
1/2t baking soda
1/4t.salt
1 egg,lightly beaten
2 c. buttermilk( i use 1 1/2 c. skim milk)
1t. vanilla extract( i didnt have any left so I used cinnamon, to taste)
Directions:
Combine first 7 ingredients in one bowl. In another bowl, combine last 4 ingredients. Stir wet ingredients into dry.Mix until just mositened.
Pour batter by 1/4 cupfuls onto hot griddle coated with cooking spray(i used some canola oil) Turn when tops bubble. Cook until second side is golden brown.
Serve with assorted berries.( I used 4 T cool whip free, for topping then added berries)
